Vegetarian Sarma

Traditional Balkan cabbage rolls stuffed with rice and vegetables, simmered in a light tomato sauce for a comforting vegetarian meal.

Ingredients

  • 6 large cabbage leaves (from 1 small head)
  • 1/2 cup cooked rice
  • 1 small onion, finely chopped
  • 1 carrot, grated
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup tomato passata (or crushed tomatoes)
  • 1/2 cup water
  • 1 teaspoon dried savory (optional, for authentic flavor)

Instructions

  1. Blanch cabbage leaves in boiling water for 2-3 minutes until soft; drain and pat dry.
  2. In a pan, heat oil over medium heat; sauté onion and carrot for 3 minutes until softened.
  3. Mix in cooked rice, paprika, salt, pepper, and savory; cook for 1 minute to combine.
  4. Place 2 tablespoons of filling on each cabbage leaf, roll tightly, and tuck in sides.
  5. Arrange rolls seam-side down in a small pot; pour tomato passata and water over them.
  6. Bring to a simmer, cover, and cook on low for 30 minutes until tender.

Notes

Serve warm with yogurt or bread. For one person, this yields 6 small rolls—scale up if needed. Keep spices minimal for simplicity.
