Cheese Burek

A simple, flaky Balkan pastry filled with creamy cheese, baked to golden perfection for a comforting vegetarian snack.

Ingredients

  • 4 sheets phyllo dough (thawed if frozen)
  • 100g feta cheese, crumbled
  • 50g ricotta or cottage cheese
  • 1 egg, beaten (for filling and brushing)
  • 2 tbsp olive oil or melted butter
  • Pinch of salt (optional, as feta is salty)

Instructions

  1. Preheat oven to 180°C (350°F). Line a small baking sheet with parchment paper.
  2. Mix crumbled feta, ricotta, half the beaten egg, and a pinch of salt in a bowl to form the filling.
  3. Lay out one sheet of phyllo on a clean surface, brush lightly with oil or butter. Place a quarter of the filling along one edge, then roll up tightly into a cigar shape. Repeat with remaining sheets and filling.
  4. Place rolls seam-side down on the baking sheet. Brush tops with remaining egg for shine.
  5. Bake for 20-25 minutes until golden and crisp. Let cool slightly before serving.

Notes

  • For one person, this makes 4 small rolls; serve warm with yogurt on the side.
  • Use store-bought phyllo for ease; handle gently to avoid tearing.
